Deficiency of essential fatty acids results in a fatty liver because essential fatty acids are important for a number of biochemical processes, including prostaglandin, thromboxane, lipoxin, & leukotriene pathways. These pathways are critical to the normal functioning of multiple organ systems, including the brain, retina, liver, kidney, adrenal gland, and gonad & also serve a central role in inflammation and epidermal barrier function. Essential fatty acids are found in plant seeds, soybeans, green leafy vegetables, vegetable oils, meats, eggs, and fish. Deficiency of fatty acids results in poor growth and development; essential fatty acids helps in the setting of generalized malnutrition and so isolating direct cause and effect is challenging.
