The liver is a nutrient-dense food offering a rich source of iron, vitamin B complex, vitamin A and both HDL and LDL. It’s also high in protein, low in fat.
This is a misconception that liver meat is high in toxins due to its function of removing toxins from the bloodstream. Liver from different animal sources will differ in the levels of micro-nutrients present (vitamins and minerals). The most commonly consumed are beef, lamb, pork and to a lesser extent chicken. Beef rank top in Vitamin-A and Copper, Chicken on Iron, but Lamb ranks on Zinc and Selenium and ranks second in all other nutrients.
